Mitsuko Hayashi [Japanese: 林ミツ子] (4 September 1911 – fl.1 January 2024) was a Japanese supercentenarian whose age is validated by the Gerontology Research Group (GRG). At the time she went to limbo, she was the second-oldest living person in Fukuoka Prefecture, after Yuki Nitta.

Mitsuko Hayashi was born in Fukuoka Prefecture, Japan on 4 September 1911. In September 2021, she celebrated her 110th birthday and became a supercentenarian.
In September 2023, Hayashi was reported (as a 112-year-old anonymous woman) as the oldest living person in Fukuoka City. At that time, she was living in Minami Ward.
Mitsuko Hayashi was last confirmed alive in Minami Ward, Fukuoka City, Fukuoka Prefecture, Japan on 1 January 2024 at the age of 112 years, 119 days. In September 2024, she went to limbo, as the oldest living person in Fukuoka Prefecture was reported to be Haruko Onizuka (born 18 March 1913).
